Ingredients

  • 2 medium cucumbers, halved, seeded and sliced into matchsticks
  • 1 medium red bell pepper, seeded and sliced into matchsticks
  • 1 large papaya, halved, seeded, peeled and sliced into matchsticks
  • 1 (8-oz.) pkg. fresh bean sprouts
  • 2 cups tri-color slaw mix
  • 3/4 cup bottled Asian dressing
  • 1/4 cup sliced green onions
  • 1 (3-oz.) pkg. crispy chow mein noodles

  1. Lightly toss cucumbers, bell pepper, papaya, bean sprouts and slaw mix in a large bowl.
  2. Pour dressing over cucumber mixture; toss lightly. Cover bowl with plastic wrap and refrigerate 30 minutes.
  3. Toss before serving. Top with green onions and chow mein noodles.
