Apple and Brie-Stuffed Chicken

Ingredients

  • 2 tbsp. olive oil
  • 1/2 cup chopped onion
  • 1 tart apple, cored and coarsely chopped
  • 1 1/4 tsp. fresh thyme, divided
  • 2 tbsp. chopped fresh basil, divided
  • 3/4 cup dry white wine, divided
  • 4 oz. Brie, rind removed and cut into small chunks
  • 4 (5-oz.) boneless, skinless chicken breasts

  1. For the stuffing, in a large nonstick skillet heat oil over medium heat. Add onion; cook 7 to 8 minutes or until tender. Add apple, 1/2 teaspoon thyme, 1 tablespoon basil, 1/4 cup wine, and salt and pepper to taste; cook 4 to 6 minutes or until apples are tender. Remove skillet from heat and stir in Brie; set aside.
  2. Preheat oven to 400°F. Cut a slit in the side of each chicken breast. Spoon one-fourth of the stuffing into each breast. Season chicken with 1/4 teaspoon thyme, and salt and pepper to taste. Place chicken in a 13x9-inch baking dish. Bake 35 to 45 minutes or until an instant-read thermometer registers 165°F. Transfer chicken to a serving dish, and keep warm.
  3. Skim fat from baking dish and spoon drippings into a small saucepan. Place saucepan over medium high heat. Add remaining thyme, basil and wine. Simmer drippings until reduced by half. Season with salt and pepper to taste. Spoon drippings over chicken, and serve.
