Ingredients

  • 2 medium shallots
  • 1 to 2 tbsp. chopped fresh thyme
  • 2 tsp. salt-free onion?herb seasoning
  • 1 tsp. orange zest
  • 1 tsp. sugar
  • 1/2 tsp. coarsely ground pepper
  • 2 lbs. beef tenderloin, trimmed

  1. In a food processor combine shallots, thyme, onion?herb seasoning, orange zest, sugar and pepper; process until finely chopped. Spread evenly on the top and sides of the tenderloin. Cover and refrigerate at least 8 hours.
  2. Preheat oven to 400°F. Coat a roasting rack with nonstick cooking spray, and place rack in a roasting pan. Place tenderloin on roasting rack.
  3. Place pan in oven. Roast 30 minutes or until an instant-read thermometer registers 135°F for medium-rare, or to desired doneness. Remove from oven and let stand 5 minutes before slicing.
