Honey Glazed Goat Cheese Carrots

Ingredients

  • 2 lbs whole carrots whole carrots
  • ¼ cup brown sugar
  • 2 teaspoons honey
  • 2 teaspoons melted butter
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper
  • 1 teaspoon cinnamon
  • 4 oz goat cheese
  • Optional: fresh thyme, pomegranate seeds & pecans fresh thyme, pomegranate seeds & pecans

  1. Preheat oven to 350 degrees
  2. Line carrots on a baking sheet
  3. In a small bowl, whisk together brown sugar, honey, melted butter, and spices
  4. Brush on the mixed glaze to carrots (leave some left for more glazing later)
  5. Bake for 45 – 60 mins, halfway use leftover glaze to re-glaze the carrots on the other sides
  6. Once carrots are fully cooked, remove from oven, sprinkle goat cheese on top with other optional ingredients of thyme, nuts, ect.
