Beer Battered Shrimp Tacos with Honey-Lime Dressing

Ingredients

  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 tablespoons fresh cilantro (finely chopped)
  • 1 clove garlic (peeled and minced)
  • 1 teaspoon jalapeño pepper (chopped)
  • 3/4 cups flour
  • 3/4 cups IPA craft beer (enjoy the rest)
  • 1 large egg
  • 1/4 teaspoon cayenne pepper (to taste)
  • 1/4 teaspoon salt
  • 1lb shrimp (raw, deveined)
  • 1 teaspoon garlic powder
  • 1/2 cup vegetable oil
  • 1 handful scallions
  • 1 cup cabbage
  • 6 large corn tortillas

  1. For Honey-Lime Dressing: Mix lime juice, olive oil, honey, cilantro, garlic and jalapeño pepper together in a medium bowl, set aside.
  2. In a large bowl stir together flour, cayenne pepper, garlic powder and salt.
  3. Add egg and beer to flour mixture, stir until well combined.
  4. Heat oil in skillet.
  5. Toss shrimp in batter to coat.
  6. Add battered shrimp to oil and cook until golden and crispy, about 2 minutes per side. Remove and let drain on a paper towel.
  7. Add shrimp to tortillas, top with cabbage, scallions, and honey-lime dressing.
