- Add cottage cheese to a food processor, and pulse a few times until the curds smooth out.
- Chop shallots, 2 tbsp. chives, and tarragon. Add to a small mixing bowl.
- Combine whipped cottage cheese to your chopped mixture. Add olive oil, as well as salt and pepper to taste.
- Serve with your favorite bread or crackers. Garnish with remaining chives and enjoy.
Optional Step: Place spread in refrigerator for at least one hour before serving. This allows for those savory flavors to mend together, it's definitely worth the wait!
