Ingredients

  • 1/2 cup refrigerated raspberry juice
  • 1 tbsp. maple syrup or honey
  • 2 tbsp. thinly sliced green onion
  • 1 tsp. fresh lemon juice
  • 2 tbsp. light olive oil
  • 6 cups baby greens
  • 1 cup red seedless grapes (halved, if desired)
  • 1 small Yellow Delicious apple, cored and thinly sliced

  1. For dressing, in a small bowl combine raspberry juice, syrup, onion and lemon juice. Season with salt and pepper to taste. Whisk in oil.
  2. Arrange greens on 6 salad plates. Top with grapes and apple. Drizzle with dressing, and serve.
