Corned Beef Brisket and Cabbage

  • 3 pounds corned beef brisket with spice packet
  • 10 small red potatoes
  • 5 carrots peeled and cut into 3-inch pieces
  • 1 large head cabbage cut into wedges
  • 2 tsp pickling spice (optional if no spice packet)

  1. Put corned beef into large pot and cover with water. Add spice packet that comes with corned beef or 2-3 teaspoons of picking spice. Cover pot and bring to a boil, then reduce to a simmer. Simmer for approximately 45 minutes per pound or until tender.
  2. Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for an additional 15 minutes. Remove meat and let rest for 15 minutes.
  3. Place vegetables in a bowl and cover. Add broth as desired. Serve with meat sliced against the grain.
