Grilled Salmon with Avocado Salsa
Serves: 4
Ingredients
- 2 medium avocados, cubed
- 1 large tomato, cubed
- 1/3 cup onions, minced
- 1 lime, juiced
- 1 Tbsp. capers
- 1-1/2 Tbsp. Our Family brand cooking oil
- 1 Tbsp. fresh cilantro, chopped
- 1/3 cup green onion, finely sliced
- 2 tsp. fresh ginger, minced
- 2 tsp. Our Family brand extra virgin olive oil
- 1-1/2 lb. Copper River Salmon
- 1 tsp. freshly ground black pepper
- 1 tsp. salt
Directions
Mix first 9 ingredients together gently for salsa. Chill. Preheat grill or broiler. Brush salmon lightly with olive oil, season with salt and pepper and grill skin side up for 4 to 5 minutes. Turn salmon over and continue to grill another 4 to 5 minutes, depending on desired doneness. Serve immediately with salsa.
