Grilled Salmon with Avocado Salsa

 

 
Serves:  4
 
Ingredients
  • 2 medium avocados, cubed
  • 1 large tomato, cubed
  • 1/3 cup onions, minced
  • 1 lime, juiced
  • 1 Tbsp. capers
  • 1-1/2 Tbsp. Our Family brand cooking oil
  • 1 Tbsp. fresh cilantro, chopped
  • 1/3 cup green onion, finely sliced
  • 2 tsp. fresh ginger, minced
  • 2 tsp. Our Family brand extra virgin olive oil
  • 1-1/2 lb. Copper River Salmon
  • 1 tsp. freshly ground black pepper
  • 1 tsp. salt
 
Directions
Mix first 9 ingredients together gently for salsa. Chill.  Preheat grill or broiler. Brush salmon lightly with olive oil, season with salt and pepper and grill skin side up for 4 to 5 minutes. Turn salmon over and continue to grill another 4 to 5 minutes, depending on desired doneness. Serve immediately with salsa.
